The Wii Fit sold hundreds of thousands of copies in its first week. According to VGchartz, it was 729,598. So obviously, Nintendo was well equipped for the launch. That being said, I understand your struggle. The only thing you can do is just keep checking and hopefully find a copy. You might want to limit your driving and gas losses by calling ahead. Walmart.com allows you to check the stock of local stores - but you have to go early in the day to get in demand items like this. You can call Gamestop and have them check all the local stores (my town has THIRTY) to see if they have it. Gamecrazy always seems to have the sought after titles in my town, if you have one, check it. Get an early start on a Sunday and you might have some luck. I am sorry for your frustration, but if you want the game, you have to keep trying. You can always save your $100 and wait until the game is more widely available.
